Dietz has very strong ties to Head Coach Jim McElderry, as McElderry recruited and coached Dietz at Fairfield University from 1998-2001. A 2002 graduate of Fairfield University with a degree in Business and Marketing, Dietz helped the Fairfield men's soccer team become one of the best in the northeast, as the team was ranked nationally in each of his last three seasons and won the MAAC Championship in 1999. Athletically, he earned First Team All-Conference honors as a sophomore in 1999 and as a senior in 2001, and was named to the MAAC All-Tournament Team in 2001.
Academically, Dietz was named First Team Academic All-Conference from 1999-2001 and to the Dean's List during each of his four years at Fairfield. A native of Louisville, Kentucky, Dietz was an All-American nominee in 1996 and 1997 at St. Xavier High School, where the team won two state championships in 1994 and 1997. He earned All-State honors twice, while also garnering First Team All-Midwest Honors, twice.
A starter for the Region II ODP team for three years (1996-1998), Dietz attended the US National Team Trials in Cocoa Beach, Florida, three times, and played in an international tournament with the Region II team in Costa Rica in 1998. Among his other honors, Dietz was named a two-day All-Star at the first annual Adidas ESP Camp and was a member of the Kentucky State ODP Team for seven years. Dietz has been a head coach in the Fairfield United Soccer Association in 2002 and 2003, as well as being on staff at the Storm Academy, where is the head coach of the `91 Y-League Team.
